Ingredients
  

For the Stuffing
  • 4 fillets salmon Fresh or thawed if frozen
  • 1 cup cooked shrimp chopped
  • 1/2 cup cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh spinach chopped
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
For Assembling
  • Salt and pepper
  • Olive oil
  • Fresh parsley

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a mixing bowl, combine the chopped shrimp, cream cheese, Parmesan cheese, spinach, garlic, lemon juice, salt, and pepper.
  3. Step 3: Carefully cut a pocket in each salmon fillet.
  4. Step 4: Stuff each salmon fillet with the shrimp mixture, pressing gently to secure it inside.
  5. Step 5: Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil.
  6. Step 6: Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through.
  7. Step 7: Remove from the oven and let cool slightly. Garnish with fresh parsley, if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, simply place in the oven at 350°F (175°C) until warmed through.
