- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a mixing bowl, combine the chopped shrimp, cream cheese, Parmesan cheese, spinach, garlic, lemon juice, salt, and pepper.
- Step 3: Carefully cut a pocket in each salmon fillet.
- Step 4: Stuff each salmon fillet with the shrimp mixture, pressing gently to secure it inside.
- Step 5: Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil.
- Step 6: Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through.
- Step 7: Remove from the oven and let cool slightly. Garnish with fresh parsley, if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, simply place in the oven at 350°F (175°C) until warmed through.
