Ingredients
  

For the Creamy Shrimp Filling
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1/4 cup red bell pepper diced
  • 1/4 cup celery diced
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • 1 tsp Old Bay seasoning
For the Rolls
  • 4 large rolls submarine or hoagie rolls for filling
  • Fresh parsley chopped, for garnish

Method
 

  1. Step 1: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Step 2: Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Remove from heat and let them cool slightly.
  3. Step 3: In a mixing bowl, combine the diced red bell pepper, diced celery, mayonnaise, sour cream, lemon juice, Old Bay seasoning, salt, and pepper. Mix well.
  4. Step 4: Chop the cooked shrimp into bite-sized pieces and fold them into the mixture.
  5. Step 5: Slice the rolls open gently without cutting all the way through. Fill each roll with the creamy shrimp mixture.
  6. Step 6: Garnish with chopped parsley before serving. Enjoy!

Notes

To store any leftovers, place the stuffed rolls in an airtight container and refrigerate for up to 2 days.
