  • 1 cup cherry tomatoes halved

  • 1 cup seafood mix shrimp, scallops, and mussels
  • 1/2 cup grated Parmesan cheese For that cheesy goodness.

Method
 

  1. Step 1: Cook the fettuccine or linguine according to package instructions. Drain and set aside.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Step 3: Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Step 4: Add the cherry tomatoes and cook until they soften, about 3-4 minutes.
  5. Step 5: Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally.
  6. Step 6: Add the seafood mix, Italian seasoning, salt, and pepper. Cook until the seafood is cooked through, about 5-7 minutes.
  7. Step 7: Stir in the cooked pasta and Parmesan cheese until everything is well combined.
  8. Step 8: Serve immediately, garnished with fresh parsley and lemon wedges on the side.

Notes

If you happen to have leftovers, store them in an airtight container in the refrigerator. They will last for up to 2 days. Reheat gently on the stove with a splash of cream to bring back that creamy goodness!
