Creamy Seafood Lasagna Roll-Ups

Ingredients
  

Lasagna Roll-Ups
  • 9 noodles lasagna noodles
  • 1 tbsp olive oil a healthy fat that enhances flavor.
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup cooked shrimp chopped
  • 1 cup cooked crab meat
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 1 tsp lemon juice
Seasonings
  • Salt
  • Pepper
  • 2 cups Alfredo sauce the creamy base that ties it all together.
  • 1/2 cup mozzarella cheese additional for topping

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Step 3: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until softened, about 3-4 minutes.
  4. Step 4: Stir in the chopped shrimp and crab meat, cooking for an additional 2-3 minutes until warmed through.
  5. Step 5: In a mixing bowl, combine the ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, parsley, lemon juice, salt, and pepper. Mix until well blended.
  6. Step 6: Spread a thin layer of Alfredo sauce in the bottom of a baking dish.
  7. Step 7: Take one lasagna noodle and spoon a portion of the seafood mixture along its length. Roll it up and place it seam-side down in the baking dish. Repeat with remaining noodles.
  8. Step 8: Once all roll-ups are in the dish, pour the remaining Alfredo sauce over the top, and sprinkle with additional mozzarella cheese.
  9. Step 9: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  10. Step 10: Let cool for a few minutes before serving. Enjoy with a sprinkle of fresh parsley on top!

Notes

These roll-ups can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply pop them in the oven at 350°F (175°C) until warmed through.
