- Step 1: In a large pot, melt the butter over medium heat.
- Step 2: Add the diced onion and garlic, and sauté until softened, about 5 minutes.
- Step 3: Stir in the diced potatoes and cook for an additional 3 minutes.
- Step 4: Pour in the vegetable or seafood stock and bring to a boil.
- Step 5: Reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Step 6: Add the sweet corn and heavy cream, and simmer for another 5 minutes.
- Step 7: Stir in the chopped lobster meat and heat through.
- Step 8: Season with salt and pepper to taste.
- Step 9: Serve hot, garnished with fresh chives or parsley.
Notes
This chowder can be stored in an airtight container in the fridge for up to 3 days. Just reheat gently on the stovetop, adding a splash more cream if it thickens too much.
