For the Bisque
  • 1 lb lobster meat cooked and chopped
  • 1 lb shrimp peeled and deveined
  • 1 lb crab meat cooked and picked
  • 4 tbsp unsalted butter
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 stalks celery diced
  • 1 large carrot diced
  • 1/4 cup all-purpose flour
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 tsp Old Bay seasoning
  • Salt and pepper to taste
  • Fresh parsley

Equipment

  • Large Pot

Method

  1. Step 1: In a large pot, melt the butter over medium heat. Add the diced onion, minced garlic, celery, and carrot. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Step 2: Stir in the flour and cook for an additional 2 minutes, stirring constantly to avoid lumps.
  3. Step 3: Gradually add the seafood stock while stirring. Bring the mixture to a gentle simmer.
  4. Step 4: Add the chopped lobster meat, shrimp, crab meat, Old Bay seasoning, salt, and pepper. Cook for about 10 minutes, or until the shrimp are cooked through.
  5. Step 5: Reduce the heat to low and stir in the heavy cream. Heat gently without boiling for about 5 minutes.
  6. Step 6: Serve hot, garnished with fresh parsley for a beautiful finish.

Notes
