Ingredients

For the Bisque
  • 1 tail lobster tail cooked and chopped
  • 0.5 lb shrimp peeled and deveined
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 2 cups seafood or chicken broth
  • 1 cup heavy cream
  • 0.5 cup milk
  • 1 tbsp tomato paste
  • 0.5 tsp paprika
  • 0.5 tsp Old Bay seasoning
  • salt and black pepper to taste
  • fresh parsley for garnish

Equipment

  • Large Pot

Method

  1. Step 1: Melt butter together with olive oil in a large pot over medium heat. Add finely chopped onion and minced garlic; sauté until soft and translucent.
  2. Step 2: Stir in tomato paste. Pour in seafood or chicken broth and bring to a gentle simmer. Let cook for a few minutes to meld flavors.
  3. Step 3: Stir in heavy cream and milk. Season with paprika, Old Bay seasoning, salt, and black pepper.
  4. Step 4: Add chopped lobster and shrimp to the pot. Cook for 5–7 minutes until seafood is tender and cooked through.
  5. Step 5: Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.

Notes

Make it lighter by swapping heavy cream and milk with half-and-half. Add a splash of sherry or white wine after sautéing onions and garlic for a sophisticated twist. Store leftovers in the fridge up to 3 days or freeze without seafood for up to 2 months.
