Ingredients
  

For the Stuffed Salmon
  • 4 fillets salmon
  • 8 oz shrimp peeled and deveined
  • 4 cloves garlic minced
  • 1 cup cream cheese softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley chopped
  • 1 tbsp lemon juice
  • to taste salt and pepper for seasoning
  • olive oil for cooking
  • lemon wedges for serving for a zesty finish

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Step 3: Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove from heat and let cool slightly.
  4. Step 4: In a mixing bowl, combine the cooked shrimp, cream cheese, Parmesan cheese, parsley, lemon juice, salt, and pepper. Mix until well combined.
  5. Step 5: Cut a pocket into each salmon fillet and stuff generously with the shrimp mixture.
  6. Step 6: In a baking dish, place the stuffed salmon fillets and drizzle with olive oil. Season with salt and pepper to taste.
  7. Step 7: Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Step 8: Serve with lemon wedges on the side.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at a low temperature.
