- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Step 3: Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove from heat and let cool slightly.
- Step 4: In a mixing bowl, combine the cooked shrimp, cream cheese, Parmesan cheese, parsley, lemon juice, salt, and pepper. Mix until well combined.
- Step 5: Cut a pocket into each salmon fillet and stuff generously with the shrimp mixture.
- Step 6: In a baking dish, place the stuffed salmon fillets and drizzle with olive oil. Season with salt and pepper to taste.
- Step 7: Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Step 8: Serve with lemon wedges on the side.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at a low temperature.
