For the Pasta
  • 8 oz fettuccine pasta
  • 1 lb shrimp peeled and deveined
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
For seasoning
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Step 1: Cook fettuccine pasta according to package instructions. Once cooked, drain and set aside.
  2. Step 2: In a large skillet, heat olive oil and butter over medium heat.
  3. Step 3: Add minced garlic and sauté for about 1 minute until fragrant.
  4. Step 4: Add shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes. Season with salt and pepper to taste.
  5. Step 5: Reduce heat to low and stir in heavy cream. Let it simmer for 2-3 minutes.
  6. Step 6: Gradually mix in the Parmesan cheese until melted and creamy.
  7. Step 7: Toss the cooked fettuccine into the skillet, combining it well with the shrimp and sauce.
  8. Step 8: Serve immediately, garnished with freshly chopped parsley.

Notes

For a lighter version, use half-and-half instead of heavy cream. Store leftovers in the fridge for 2-3 days.
