- Step 1: Start by seasoning the chicken breasts with salt and pepper to your taste.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side, until it’s cooked through and golden brown. Once done, remove the chicken from the skillet and set it aside.
- Step 3: In the same skillet, add the minced garlic. Sauté it for about 1 minute until it becomes fragrant, but be careful not to burn it!
- Step 4: Pour in the heavy cream, stirring to combine. Bring the mixture to a simmer.
- Step 5: Stir in the grated Parmesan cheese and Italian seasoning, cooking until the sauce is smooth and slightly thickened.
- Step 6: Meanwhile, cook the rotini pasta according to the package instructions until al dente. Once done, drain it and set it aside.
- Step 7: Slice the cooked chicken and return it to the skillet with the creamy sauce. Add the drained rotini pasta and toss everything together to coat evenly.
- Step 8: Serve hot, garnished with the chopped fresh parsley for that extra touch of freshness!
Notes
For a lighter version, you can substitute half-and-half for heavy cream. Store leftovers in an airtight container in the refrigerator for up to 3 days.
