- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: Carefully remove the lobster meat from the tails and cut into medallions, about 1-inch thick.
- Step 3: In a large skillet, melt the butter over medium heat.
- Step 4: Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Step 5: Add the lobster medallions to the skillet and cook for 3-4 minutes, turning occasionally.
- Step 6: Pour in the heavy cream and stir well.
- Step 7: Add the grated Parmesan cheese, and season with salt and pepper. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- Step 8: Transfer the lobster medallions and sauce to a baking dish and place it in the oven. Bake for 5-7 minutes.
- Step 9: Remove from the oven, and garnish with chopped parsley before serving.
Notes
Store leftovers in an airtight container in the fridge for about 2-3 days. Reheat gently on the stove with a little extra cream.
