  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Carefully remove the lobster meat from the tails and cut into medallions, about 1-inch thick.
  3. Step 3: In a large skillet, melt the butter over medium heat.
  4. Step 4: Add the minced garlic and sauté for 1-2 minutes until fragrant.
  5. Step 5: Add the lobster medallions to the skillet and cook for 3-4 minutes, turning occasionally.
  6. Step 6: Pour in the heavy cream and stir well.
  7. Step 7: Add the grated Parmesan cheese, and season with salt and pepper. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  8. Step 8: Transfer the lobster medallions and sauce to a baking dish and place it in the oven. Bake for 5-7 minutes.
  9. Step 9: Remove from the oven, and garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for about 2-3 days. Reheat gently on the stove with a little extra cream.
