  • 1 lb shrimp peeled and deveined
  • 1 cup rice jasmine or basmati
  • 2 cups vegetable or chicken broth
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
For garnish
  • Fresh parsley

Method
 

  1. Step 1: In a medium saucepan, cook the rice according to package instructions, using vegetable or chicken broth instead of water for added flavor.
  2. Step 2: In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Step 3: Add the shrimp to the skillet and season with oregano, thyme, paprika, salt, and pepper. Cook for 3-4 minutes, or until the shrimp are pink and opaque.
  4. Step 4: Pour in the heavy cream and stir to combine. Allow the mixture to simmer for 2-3 minutes, letting the sauce thicken slightly.
  5. Step 5: Once the rice is cooked, divide it into bowls. Top with the creamy garlic herb shrimp.
  6. Step 6: Garnish with freshly chopped parsley and serve immediately. Enjoy!

Notes

To store leftovers, let the dish cool completely before transferring it to an airtight container. It will keep in the refrigerator for up to 3 days. When reheating, add a splash of broth or water to loosen the sauce and prevent it from becoming too thick.
