  • 300 g large shrimp peeled and deveined
  • 2 tbsp unsalted butter
  • 3 cloves garlic minced
  • 150 ml heavy cream about 2/3 cup
  • 30 g Parmesan cheese grated (about 1/4 cup)
  • 1 tbsp fresh parsley chopped
  • salt and freshly ground black pepper to season
  • 1 cup cooked white rice jasmine or basmati preferred
  • 1 tbsp olive oil for searing the shrimp

Method
 

  1. Step 1: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Step 2: Season shrimp with salt and pepper. Place shrimp in skillet in a single layer and cook 1–2 minutes per side until pink and just cooked through. Remove shrimp and set aside.
  3. Step 3: Reduce heat to medium. Add 2 tablespoons unsalted butter and minced garlic to skillet. Sauté about 30 seconds until fragrant but not browned.
  4. Step 4: Pour in heavy cream and stir in grated Parmesan cheese. Simmer 2–3 minutes, stirring often, until sauce thickens and is silky smooth.
  5. Step 5: Return shrimp to skillet and stir to coat in sauce. Simmer together for 1 minute to combine flavors.
  6. Step 6: Serve creamy garlic butter shrimp over cooked white rice. Garnish with chopped fresh parsley and a dash of black pepper.

Notes

Swap shrimp for scallops or chicken breast if desired. Use light cream or half-and-half for a lighter sauce. Add veggies like spinach or peas for extra nutrition. Store leftovers in airtight container in fridge up to 2 days. Reheat gently to maintain sauce texture and shrimp tenderness.
