- Step 1: In a medium saucepan, heat the olive oil over medium heat. Add the rice and cook for 1-2 minutes until lightly toasted.
- Step 2: Add the broth and a pinch of salt to the rice. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
- Step 3: Meanwhile, in a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Step 4: Add the shrimp to the skillet, seasoning with paprika, salt, and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
- Step 5: Stir in the heavy cream and chopped parsley, cooking for an additional 2 minutes until the sauce is heated through.
- Step 6: Once the rice is done, fluff it with a fork and stir in the fresh herbs.
- Step 7: Serve the creamy garlic butter shrimp over the herb rice and enjoy!
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm it in a skillet over medium heat, adding a splash of broth or cream to bring back the creaminess.
