  • 8 oz fettuccine pasta
  • 1 lb shrimp peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 1 cup cherry tomatoes halved
  • 2 cups spinach fresh
  • Salt and pepper to taste
  • Fresh parsley

Method
 

  1. Step 1: Start by cooking the fettuccine according to the package instructions. Once it's al dente, drain it and set it aside.
  2. Step 2: In a bowl, toss the shrimp with Cajun seasoning until they are evenly coated.
  3. Step 3: In a large skillet, heat the olive oil over medium heat. Add the seasoned shrimp and cook for about 2-3 minutes per side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set them aside.
  4. Step 4: In the same skillet, add the minced garlic and sauté for about 1 minute until it's fragrant.
  5. Step 5: Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until it melts and the sauce is smooth.
  6. Step 6: Add the halved cherry tomatoes and fresh spinach to the skillet, cooking until the spinach wilts beautifully.
  7. Step 7: Return the shrimp to the skillet, mixing them with the sauce, and season with salt and pepper to taste.
  8. Step 8: Toss the cooked fettuccine in the skillet until it's well coated with the creamy sauce.
  9. Step 9: Serve immediately, garnished with chopped parsley for that lovely finishing touch!
