For the Creamy Cajun Garlic Shrimp
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup cherry tomatoes halved
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
For Garnish
  • Fresh parsley chopped

Method
 

  1. Step 1: In a large skillet, heat the olive oil over medium heat.
  2. Step 2: Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Step 3: Add the shrimp to the skillet, followed by the Cajun seasoning, paprika, salt, and black pepper. Cook until the shrimp turn pink, about 2-3 minutes.
  4. Step 4: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.
  5. Step 5: Add the cherry tomatoes and spinach, cooking until the spinach wilts and the tomatoes soften, about 3-4 minutes.
  6. Step 6: Stir in the Parmesan cheese until melted and creamy.
  7. Step 7: Remove from heat and garnish with chopped parsley before serving.
