  • 12 oz linguine pasta or your favorite pasta
  • 2 tbsp olive oil
  • 1 lb chicken breast sliced
  • 2 tsp Cajun seasoning
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • Fresh parsley chopped, for garnish

Method
 

  1. Step 1: Start by cooking the linguine pasta according to the package instructions. Once done, drain it and set it aside. Toss it with a little olive oil to keep it from sticking.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken breast, Cajun seasoning, salt, and pepper. Cook until the chicken is browned and fully cooked, about 6-7 minutes. Remove the chicken from the skillet and set it aside.
  3. Step 3: In the same skillet, add the sliced bell peppers and cook until softened, about 5 minutes.
  4. Step 4: Add the minced garlic to the skillet and sauté for an additional minute.
  5. Step 5: Pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese until melted and combined.
  6. Step 6: Return the cooked chicken to the skillet and add the linguine pasta. Toss everything together until well coated in the creamy sauce.
  7. Step 7: Serve hot, garnished with chopped parsley for that extra pop of color and flavor.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, add a splash of milk or cream to loosen the sauce before warming on the stove.
