Method
- Step 1: Start by cooking the linguine pasta according to the package instructions. Once done, drain it and set it aside. Toss it with a little olive oil to keep it from sticking.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken breast, Cajun seasoning, salt, and pepper. Cook until the chicken is browned and fully cooked, about 6-7 minutes. Remove the chicken from the skillet and set it aside.
- Step 3: In the same skillet, add the sliced bell peppers and cook until softened, about 5 minutes.
- Step 4: Add the minced garlic to the skillet and sauté for an additional minute.
- Step 5: Pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese until melted and combined.
- Step 6: Return the cooked chicken to the skillet and add the linguine pasta. Toss everything together until well coated in the creamy sauce.
- Step 7: Serve hot, garnished with chopped parsley for that extra pop of color and flavor.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, add a splash of milk or cream to loosen the sauce before warming on the stove.
