- First things first, preheat your oven to 350°F (175°C). While that's heating up, grab a baking sheet and line it with parchment paper. This makes cleanup a breeze!
- In a large bowl, we're going to cream together that softened butter and the granulated sugar. You want to beat them until they're nice and fluffy – this is key for tender cookies.
- Next, add in your eggs, one at a time, and the vanilla extract. Mix them in until everything is just combined. Don't overmix here!
- Now, in a separate, clean bowl, whisk together your all-purpose flour, baking powder, salt, and that wonderful ground cinnamon. This ensures all the dry ingredients are evenly distributed.
- Gradually add the dry ingredients to the wet ingredients. Mix them together until they just come together to form a dough. Again, resist the urge to overmix!
- Time to get your hands a little floured (or just doughy!). Roll the dough into 1-tablespoon sized balls. If you have a cookie scoop, that works perfectly too.
- In a small bowl, combine the ½ cup granulated sugar and the 2 teaspoons of ground cinnamon. This is our glorious churro coating!
- Take each dough ball and roll it generously in the cinnamon sugar mixture until it's completely coated. Make sure it's nice and even!
- Place the coated dough balls onto your prepared baking sheet. Give them a little space, about 2 inches apart, as they will spread a bit while baking.
- Bake for 10–12 minutes. You're looking for the edges to be lightly golden. They'll continue to firm up as they cool.
- Let the cookies cool on the baking sheet for a few minutes before carefully transferring them to a wire rack to cool completely. Patience is a virtue, especially when delicious cookies are involved!
