Ingredients

Crack Chicken Base
  • 3 cups cooked chicken, shredded rotisserie chicken is your best friend here!
  • 8 ounces cream cheese, softened makes it so wonderfully creamy!
  • 1 cup ranch dressing the secret sauce, really!
  • 12 ounces cooked bacon, crumbled because bacon makes everything better!
Pasta and Cheese
  • 9 lasagna noodles lasagna noodles, cooked al dente don't overcook them!
  • 7 ounces shredded mozzarella cheese for that perfect cheesy pull
  • 4 ounces shredded cheddar cheese hello, flavor!
Creamy Sauce
  • 1.5 cups whole milk for richness
  • 1 tablespoon unsalted butter the base of our velvety sauce
  • 1 tablespoon all-purpose flour to thicken things up
  • 1 teaspoon garlic powder because garlic is life
Fresh Finish
  • Fresh parsley, chopped optional, but it adds a lovely pop of color and freshness!

Equipment

  • 9x13-inch Baking Dish
  • Saucepan
  • Whisk
  • Foil

Method

  1. Step 1: Preheat your oven to a nice 375°F (190°C). Grab your favorite 9x13-inch baking dish and give it a quick grease.
  2. Step 2: In a saucepan over medium heat, melt that butter. Once it’s all liquid gold, whisk in the flour. Let it cook for about a minute, stirring constantly. This little step is key to a smooth sauce!
  3. Step 3: Whisk in the milk: Slowly pour in the milk, whisking like your life depends on it (okay, maybe not that dramatic, but keep whisking!). Keep going until the sauce starts to thicken up beautifully.
  4. Step 4: Add the flavor bombs: Now, blend in the softened cream cheese until everything is smooth and dreamy. Stir in the ranch dressing and the garlic powder. Oh, the aroma already!
  5. Step 5: First layer magic: Spread a nice thin layer of your creamy sauce on the bottom of your prepared baking dish. This prevents the noodles from sticking and adds extra moisture.
  6. Step 6: Layer it up: Lay down 3 of your cooked lasagna noodles. Then, dollop about one-third of your shredded chicken mixture (chicken, bacon, mozzarella, cheddar, and more sauce) over the noodles.
  7. Step 7: Repeat the goodness: You’ll repeat this layering process two more times, ending with a layer of sauce and cheese on top. It’s like building a delicious flavor tower!
  8. Step 8: Bake it covered: Cover the whole glorious creation with foil. Pop it into your preheated oven for 25 minutes. This lets all those flavors meld together perfectly.
  9. Step 9: Get it golden: Remove the foil and bake for another 10-15 minutes. You're looking for that gorgeous golden brown color and bubbly edges. That’s the sign it’s ready!
  10. Step 10: Let it rest: This is the hardest part, but trust me, it’s worth it! Let the lasagna rest for about 10 minutes before you slice into it. This allows it to set up so you get those clean, beautiful slices.
  11. Step 11: Garnish and serve: If you're feeling fancy, sprinkle some fresh chopped parsley over the top. Then, serve it up and watch everyone’s eyes light up!

Notes

Want to make this recipe your own? I love that! Here are a few ideas:
  • Spice it up: Add a pinch of red pepper flakes to the sauce for a little kick.
  • Veggies: Sautéed mushrooms or finely diced onions can be added to the chicken mixture for extra flavor and texture.
  • Different Pasta: While lasagna noodles are traditional, you could experiment with other wide noodles if you have them on hand.
  • Cheese Blends: Feel free to play with your cheese! A Colby Jack blend or even some pepper jack would be delicious.
  • No-Cook Noodles: If you find no-boil lasagna noodles, you can often use them directly, just ensure your sauce is extra creamy and plentiful to help them cook through.
A few little pointers from my kitchen to yours:
  • Shredded Chicken: Using a rotisserie chicken is a huge time-saver and adds great flavor. You can also cook and shred your own chicken breasts or thighs.
  • Softened Cream Cheese: Make sure your cream cheese is truly softened. It makes blending it into the sauce so much easier and prevents lumps.
  • Don't Overcook Noodles: If you're boiling your own lasagna noodles, cook them just until they are al dente – they will continue to cook in the oven.
  • Prep Ahead: You can assemble the entire lasagna (up to the baking step) a day in advance. Cover it tightly and store it in the refrigerator. You might need to add a few extra minutes to the covered baking time.
