Cottage Cheese Lasagna Bake with Mushrooms and Spinach

  • 9 pieces lasagna noodles
  • 2 cups cottage cheese
  • 1 piece egg
  • 2 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Step 3: In a skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes. Then, add the chopped spinach and cook until wilted. Season with garlic powder, Italian seasoning, salt, and pepper. Remove from heat.
  4. Step 4: In a mixing bowl, combine the cottage cheese with the egg, mixing until well combined.
  5. Step 5: Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Step 6: Layer 3 lasagna noodles over the sauce. Spread half of the cottage cheese mixture over the noodles, followed by half of the mushroom and spinach mixture, and a layer of mozzarella cheese. Repeat these layers with the next 3 noodles, the remaining cottage cheese mixture, the remaining mushroom and spinach mixture, and another layer of mozzarella. Finally, top with the last 3 lasagna noodles and the remaining marinara sauce.
  7. Step 7: Sprinkle the remaining mozzarella cheese on top.
  8. Step 8: Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  9. Step 9: Let it cool for a few minutes before slicing and serving. Enjoy!

Notes

Store leftovers in the refrigerator for about 3 to 5 days. You can also freeze portions for up to 3 months.
