- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cook the lasagna noodles according to package instructions; drain and set aside.
- Step 3: In a skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes. Then, add the chopped spinach and cook until wilted. Season with garlic powder, Italian seasoning, salt, and pepper. Remove from heat.
- Step 4: In a mixing bowl, combine the cottage cheese with the egg, mixing until well combined.
- Step 5: Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Step 6: Layer 3 lasagna noodles over the sauce. Spread half of the cottage cheese mixture over the noodles, followed by half of the mushroom and spinach mixture, and a layer of mozzarella cheese. Repeat these layers with the next 3 noodles, the remaining cottage cheese mixture, the remaining mushroom and spinach mixture, and another layer of mozzarella. Finally, top with the last 3 lasagna noodles and the remaining marinara sauce.
- Step 7: Sprinkle the remaining mozzarella cheese on top.
- Step 8: Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Step 9: Let it cool for a few minutes before slicing and serving. Enjoy!
Notes
Store leftovers in the refrigerator for about 3 to 5 days. You can also freeze portions for up to 3 months.
