- Step 1: Soak the gelatin sheets in cold water until softened. In a saucepan, heat the coconut milk until warm. Remove from heat and stir in the chopped white chocolate until melted and smooth. Squeeze excess water from the gelatin and add it to the warm coconut mixture, stirring until dissolved. Allow the mixture to cool slightly, then gently fold in the whipped heavy cream until fully combined. Set aside.
- Step 2: In a saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries break down and the mixture thickens, about 5-7 minutes. Soak the gelatin sheet in cold water, then add it to the warm compote, stirring until dissolved. Let cool.
- Step 3: Preheat the oven to 180°C (350°F). Grease and line a baking pan. In a bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt. In another bowl, beat the eggs until frothy, then combine with the dry ingredients. Mix until smooth. Pour the batter into the prepared pan and bake for 15-20 minutes or until a toothpick comes out clean. Let cool, then cut into rounds to fit the entremet mold.
- Step 4: In a silicone mold, pour half of the coconut mousse as the base layer. Freeze for about 30 minutes until set. Add the blueberry compote layer on top of the set mousse, then cover with the remaining coconut mousse. Ensure it is smooth and even. Place the biscuit rounds on top and press gently. Freeze for at least 4 hours or until completely set.
- Step 5: In a saucepan, combine sugar and water, and bring to a boil until the sugar dissolves. Remove from heat and add the chopped white chocolate and soaked gelatin. Stir until smooth and add food coloring if desired. Allow to cool slightly.
- Step 6: Once the entremet is fully set, carefully remove it from the mold. Pour the glaze over the entremet, ensuring it covers the top and sides evenly. Chill in the refrigerator for at least 1 hour before serving.

This delightful dessert can be stored in the refrigerator for up to 3 days. Just be sure to keep it covered to maintain its freshness. You can also freeze it for up to a month, making it a perfect make-ahead option for special occasions!
