- Step 1: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking until the garlic is golden brown, being careful not to burn it.
- Step 3: Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add reserved pasta water a little at a time until you reach the desired consistency.
- Step 4: Season with salt to taste and toss in the chopped parsley.
- Step 5: Serve immediately, garnished with grated Parmesan cheese if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of olive oil or a bit of reserved pasta water to loosen it up and bring back the flavor.
