Classic Spaghetti Aglio e Olio

Ingredients
  

For the Spaghetti Aglio e Olio
  • 400 g spaghetti choose a good quality pasta
  • 6 cloves garlic thinly sliced
  • 100 ml extra virgin olive oil a good quality olive oil enhances the dish's taste
  • 1 teaspoon red pepper flakes adjust this to your spice preference
  • Salt
  • Fresh parsley, chopped
  • Grated Parmesan cheese (optional)

Method
 

  1. Step 1: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking until the garlic is golden brown, being careful not to burn it.
  3. Step 3: Add the drained spaghetti to the skillet and toss to coat in the garlic oil. If the pasta seems dry, add reserved pasta water a little at a time until you reach the desired consistency.
  4. Step 4: Season with salt to taste and toss in the chopped parsley.
  5. Step 5: Serve immediately, garnished with grated Parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of olive oil or a bit of reserved pasta water to loosen it up and bring back the flavor.
