- Step 1: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Step 2: In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well blended.
- Step 3: Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
- Step 4: Carefully stir in the boiling water until the batter is smooth. Don’t worry, it will be thin!
- Step 5: Gently fold in the fresh raspberries and chocolate chips, if using.
- Step 6: Divide the batter evenly between the prepared cake pans.
- Step 7: Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Step 8: Allow the cakes to cool in the pans for 10 minutes, then remove from pans and transfer to a wire rack to cool completely.
- Step 9: Once cooled, frost with your favorite chocolate frosting and decorate with additional raspberries if desired.
Notes
To keep your cake fresh: Store it covered at room temperature for up to 3 days. If you need to keep it longer, refrigerate it for up to a week. You can also freeze the unfrosted layers for up to 3 months.
