- Step 1: In a large bowl, combine the shredded chicken, crumbled bacon, cheddar cheese, mozzarella cheese, and ranch dressing. Mix well until all ingredients are evenly coated.
- Step 2: Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Step 3: Place one tortilla in the skillet and spread a quarter of the chicken mixture evenly over half of the tortilla.
- Step 4: Fold the tortilla in half and cook for 3-4 minutes on each side, or until golden brown and the cheese has melted.
- Step 5: Remove from the skillet and keep warm. Repeat the process with the remaining tortillas and filling.
- Step 6: Slice the quesadillas into wedges and serve hot, garnished with chopped green onions if desired.
Notes
These quesadillas are best enjoyed fresh, but if you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. They can also be frozen for up to 2 months.
