Ingredients

For the Cheesecake Filling
  • 2 cups cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 large eggs
  • 1 cup sour cream
For the Cherry Topping
  • 1 cup fresh or frozen cherries pitted and halved
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
For the Brûlée Topping
  • 1/4 cup granulated sugar

Equipment

  • Muffin tin
  • Mixing bowl
  • Small saucepan
  • Kitchen torch

Method

  1. Step 1: Preheat the oven to 325°F (160°C). Prepare a muffin tin by lining it with cupcake liners.
  2. Step 2: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, mixing until well combined.
  3. Step 3: Add the vanilla extract and almond extract, mixing until incorporated. Then, add the eggs one at a time, mixing well after each addition.
  4. Step 4: Stir in the sour cream until the mixture is smooth and creamy.
  5. Step 5: Divide the cheesecake filling evenly among the prepared muffin tin liners.
  6. Step 6: Bake for 20-25 minutes or until the centers are set but still slightly jiggly. Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours or until fully chilled.
  7. Step 7: In a small saucepan, combine the cherries, sugar, and lemon juice. Cook over medium heat until the cherries are softened and the mixture is slightly thickened, about 5-7 minutes. Remove from heat and let cool.
  8. Step 8: Once the cheesecake cups are chilled, top each with a spoonful of the cherry mixture.
  9. Step 9: For the brûlée topping, sprinkle a thin layer of granulated sugar over each cheesecake cup. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy crust.
  10. Step 10: Allow the brûlée topping to cool for a few minutes before serving. Enjoy your Cherry Vanilla Almond Brûlée Cheesecake Cups!

Notes

Store any leftovers in an airtight container in the refrigerator. They will stay fresh for up to 5 days. Just be sure to add the brûlée topping right before serving to keep that crunchy texture!
