Method
 

  1. Step 1: Combine cherries, sugar, fresh lime juice, lime zest, minced chili, grated ginger, and a pinch of salt in a medium saucepan over medium heat.
  2. Step 2: Bring mixture to a gentle boil, stirring occasionally to dissolve sugar and soften cherries.
  3. Step 3: Reduce heat to low and simmer gently for 20–25 minutes, stirring frequently to prevent sticking, until jam thickens.
  4. Step 4: Mash cherries slightly for chunkier texture or blend briefly for smoother jam, according to preference.
  5. Step 5: Remove from heat and let jam cool; it will thicken further as it sets.
  6. Step 6: Transfer jam into a clean jar and refrigerate. Best enjoyed chilled.

Notes

Substitute cherries with strawberries or raspberries for a different berry twist. Adjust heat by removing seeds from chili or using jalapeño.
