Ingredients
  

For the Filling
  • 1 lb shrimp peeled and deveined
  • 1 package puff pastry sheets thawed
  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions chopped
  • 1 tbsp garlic minced
  • 1 tbsp lemon juice
For Egg Wash
  • 1 egg beaten (for egg wash)

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a mixing bowl, combine the shrimp, cream cheese, cheddar cheese, green onions, garlic, lemon juice, salt, and pepper. Mix well until fully incorporated.
  3. Step 3: Roll out the puff pastry sheets on a lightly floured surface. Cut into squares, approximately 4 inches by 4 inches.
  4. Step 4: Place a spoonful of the shrimp mixture in the center of each pastry square. Fold the pastry over to form a triangle or rectangle, sealing the edges by pressing them together with a fork.
  5. Step 5: Brush the tops of the pastries with the beaten egg.
  6. Step 6: Arrange the pastries on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until puffed and golden brown.
  7. Step 7: Remove from the oven and let cool slightly before serving.

Notes

These pastries can be stored in an airtight container in the fridge for up to three days. If you want to keep them longer, you can freeze them before baking.
