Method
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large pot, boil the sliced potatoes for about 10 minutes or until slightly tender. Drain and set aside.
- Step 3: In a skillet, melt the butter over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes.
- Step 4: Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Stir in garlic powder, salt, and pepper.
- Step 5: In a baking dish, layer half of the boiled potatoes, followed by the shrimp and mushroom mixture. Pour half of the cream over the top, then sprinkle with half of the cheese.
- Step 6: Repeat the layers with the remaining potatoes, shrimp and mushroom mixture, cream, and cheese.
- Step 7: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
- Step 8: Garnish with fresh parsley if desired and serve hot.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days.
