Ingredients
  

For the Cheesy Shrimp & Mushroom Potato Bake
  • 4 medium potatoes peeled and sliced
  • 1 cup shrimp peeled and deveined
  • 1 cup mushrooms sliced
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup cream
  • 2 tbsp butter for sautéing mushrooms
  • 1 tsp garlic powder

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large pot, boil the sliced potatoes for about 10 minutes or until slightly tender. Drain and set aside.
  3. Step 3: In a skillet, melt the butter over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes.
  4. Step 4: Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Stir in garlic powder, salt, and pepper.
  5. Step 5: In a baking dish, layer half of the boiled potatoes, followed by the shrimp and mushroom mixture. Pour half of the cream over the top, then sprinkle with half of the cheese.
  6. Step 6: Repeat the layers with the remaining potatoes, shrimp and mushroom mixture, cream, and cheese.
  7. Step 7: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden and bubbly.
  8. Step 8: Garnish with fresh parsley if desired and serve hot.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days.
