Cheesy Shrimp Alfredo Roll-Ups

Ingredients
  

For the Cheesy Shrimp Alfredo Roll-Ups
  • 8 oz fettuccine pasta
  • 1 lb shrimp peeled and deveined
  • 2 cups Alfredo sauce store-bought or homemade
  • 1 cup shredded mozzarella cheese for topping
  • 1 cup spinach chopped
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese for topping
  • Fresh parsley for garnish (optional)

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cook the fettuccine pasta according to package instructions. Drain and set aside.
  3. Step 3: In a large skillet, heat a small amount of oil over medium heat. Add the shrimp, garlic powder, Italian seasoning, salt, and pepper. Cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from heat.
  4. Step 4: In a large bowl, combine the cooked pasta, shrimp, Alfredo sauce, chopped spinach, and half of the mozzarella cheese. Mix until well combined.
  5. Step 5: Spread a thin layer of the remaining Alfredo sauce on the bottom of a baking dish.
  6. Step 6: Take a portion of the pasta mixture and place it on a tortilla or flatbread. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining mixture.
  7. Step 7: Pour the remaining Alfredo sauce over the roll-ups and sprinkle with the remaining mozzarella and grated Parmesan cheese.
  8. Step 8: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Step 9: Garnish with fresh parsley if desired before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat them in the oven or microwave, but I recommend using the oven for that fresh-baked taste!
