- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cook the fettuccine pasta according to package instructions. Drain and set aside.
- Step 3: In a large skillet, heat a small amount of oil over medium heat. Add the shrimp, garlic powder, Italian seasoning, salt, and pepper. Cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from heat.
- Step 4: In a large bowl, combine the cooked pasta, shrimp, Alfredo sauce, chopped spinach, and half of the mozzarella cheese. Mix until well combined.
- Step 5: Spread a thin layer of the remaining Alfredo sauce on the bottom of a baking dish.
- Step 6: Take a portion of the pasta mixture and place it on a tortilla or flatbread. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining mixture.
- Step 7: Pour the remaining Alfredo sauce over the roll-ups and sprinkle with the remaining mozzarella and grated Parmesan cheese.
- Step 8: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Step 9: Garnish with fresh parsley if desired before serving.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat them in the oven or microwave, but I recommend using the oven for that fresh-baked taste!
