Ingredients
  

For the Cheesy Ravioli
  • 1 package cheese ravioli 9 oz, fresh or frozen
  • 2 cups fresh spinach chopped
  • 1 cup mushrooms sliced
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional
For Serving
  • Grated Parmesan cheese

Method
 

  1. Step 1: Cook the cheese ravioli according to package instructions. Once tender, drain and set aside.
  2. Step 2: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Step 3: Add sliced mushrooms to the skillet and cook for 3-4 minutes until tender and starting to brown.
  4. Step 4: Stir in chopped spinach and sun-dried tomatoes. Cook for an additional 2-3 minutes until the spinach is wilted.
  5. Step 5: Season with salt, black pepper, and red pepper flakes if desired.
  6. Step 6: Add cooked ravioli to the skillet and gently toss everything together to combine.
  7. Step 7: Serve hot, garnished with grated Parmesan cheese!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat, adding a splash of water or broth, or microwave if in a hurry.
