Ingredients
  

For the Lasagna Roll-Ups
  • 12 noodles lasagna cooked according to package instructions
  • 1 lb shrimp peeled and deveined
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 2 cups marinara sauce
  • fresh parsley chopped, for garnish

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. Step 3: In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Step 4: Add the shrimp to the skillet, season with Italian seasoning, salt, and pepper. Cook until the shrimp turn pink, about 3-4 minutes. Remove from heat and let cool slightly.
  5. Step 5: In a bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well.
  6. Step 6: Lay a cooked lasagna noodle flat and spread a portion of the ricotta mixture on top. Add a few shrimp, then roll the noodle up tightly.
  7. Step 7: Repeat the process with the remaining noodles and filling.
  8. Step 8: Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the lasagna roll-ups seam-side down in the dish.
  9. Step 9: Pour the remaining marinara sauce over the roll-ups and sprinkle with the remaining mozzarella and Parmesan cheese.
  10. Step 10: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  11. Step 11: Garnish with chopped parsley before serving. Enjoy!

Notes

These roll-ups can be stored in an airtight container in the refrigerator for up to 3 days. If you want to freeze them, assemble the dish without baking, cover tightly with foil, and store in the freezer for up to 2 months.
