Method
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- Step 3: In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Step 4: Add the shrimp to the skillet, season with Italian seasoning, salt, and pepper. Cook until the shrimp turn pink, about 3-4 minutes. Remove from heat and let cool slightly.
- Step 5: In a bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well.
- Step 6: Lay a cooked lasagna noodle flat and spread a portion of the ricotta mixture on top. Add a few shrimp, then roll the noodle up tightly.
- Step 7: Repeat the process with the remaining noodles and filling.
- Step 8: Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the lasagna roll-ups seam-side down in the dish.
- Step 9: Pour the remaining marinara sauce over the roll-ups and sprinkle with the remaining mozzarella and Parmesan cheese.
- Step 10: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Step 11: Garnish with chopped parsley before serving. Enjoy!
Notes
These roll-ups can be stored in an airtight container in the refrigerator for up to 3 days. If you want to freeze them, assemble the dish without baking, cover tightly with foil, and store in the freezer for up to 2 months.
