For the Cheesy Garlic Shrimp & Chicken Rice Bake
  • 1 cup uncooked rice long-grain variety preferred
  • 2 cups chicken broth
  • 1 lb shrimp peeled and deveined
  • 1 lb chicken breast diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup frozen peas optional

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt, pepper, paprika, and onion powder.
  3. Step 3: Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  4. Step 4: Stir in the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove from heat.
  5. Step 5: In a large mixing bowl, combine the uncooked rice, chicken broth, heavy cream, cooked chicken and shrimp mixture, parsley, and frozen peas (if using). Mix well.
  6. Step 6: Transfer the mixture to a greased baking dish. Top with shredded cheddar and mozzarella cheese.
  7. Step 7: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  8. Step 8: Remove from the oven and let sit for a few minutes before serving. Enjoy!

Notes

This dish stores beautifully! You can keep leftovers in an airtight container in the fridge for up to 3 days. Just reheat in the microwave or oven until warmed through.
