- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt, pepper, paprika, and onion powder.
- Step 3: Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Step 4: Stir in the shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove from heat.
- Step 5: In a large mixing bowl, combine the uncooked rice, chicken broth, heavy cream, cooked chicken and shrimp mixture, parsley, and frozen peas (if using). Mix well.
- Step 6: Transfer the mixture to a greased baking dish. Top with shredded cheddar and mozzarella cheese.
- Step 7: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Step 8: Remove from the oven and let sit for a few minutes before serving. Enjoy!
Notes
This dish stores beautifully! You can keep leftovers in an airtight container in the fridge for up to 3 days. Just reheat in the microwave or oven until warmed through. If you want to freeze it, make sure to cool it completely before transferring to a freezer-safe container. It will last for about 2 months in the freezer.
