Ingredients
  

For the Casserole
  • 1 bag frozen tater tots 32 oz
  • 2 cups cooked shredded chicken rotisserie chicken recommended
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices bacon cooked and crumbled
  • 1 can cream of chicken soup 10.5 oz
  • 0.5 cup sour cream
  • 0.5 cup ranch dressing
  • 1 tsp garlic powder
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Step 1: Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. Step 2: In a large bowl, combine cream of chicken soup, sour cream, ranch dressing, garlic powder, and black pepper. Whisk until smooth. Stir in shredded chicken and half of the crumbled bacon.
  3. Step 3: Spread the chicken mixture evenly into the prepared baking dish. Sprinkle with 1 cup of cheddar cheese and 1/2 cup of mozzarella cheese.
  4. Step 4: Arrange frozen tater tots in a single layer over the chicken and cheese mixture. Scatter the remaining cheddar cheese, mozzarella cheese, and crumbled bacon over the tater tots.
  5. Step 5: Bake uncovered for 40–45 minutes, or until tater tots are golden brown and crispy, and the casserole is bubbly.
  6. Step 6: Let the casserole rest for 5 minutes before serving. Sprinkle with fresh chopped parsley.

Notes

This casserole reheats well. For a vegetarian option, substitute chicken with cooked broccoli or cauliflower. You can also add corn or peas to the chicken mixture for extra vegetables.
