Method
- Step 1: Preheat your oven to 375°F (190°C) so it’s ready to go when your chicken is done.
- Step 2: Season the chicken breasts with salt and black pepper, making sure to coat them well.
- Step 3: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until golden brown on both sides, about 5-7 minutes per side. Once done, remove from the skillet and set aside.
- Step 4: In the same skillet, melt the butter over medium heat. Sauté the minced garlic until fragrant, about 1 minute.
- Step 5: Pour in the heavy cream, stirring to combine. Then, add the cheddar cheese, Parmesan cheese, and Italian seasoning, stirring until the cheeses are melted and the sauce is smooth.
- Step 6: Cook the penne pasta according to package instructions. Once cooked, drain and add to the creamy sauce, mixing well to coat the pasta.
- Step 7: Place the chicken breasts on top of the creamy pasta in the skillet. Transfer the skillet to your preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
- Step 8: Once out of the oven, garnish with chopped parsley before serving. Enjoy your delicious meal!
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm in the oven or microwave until heated through. The creamy sauce may thicken in the fridge, so add a splash of milk when reheating if needed.
