- Step 1: In a large pot, bring 4 cups of water to a boil.
- Step 2: Add the baby potatoes and cook for about 10 minutes or until they are tender.
- Step 3: Stir in the Cajun seasoning, sliced sausage, corn, and minced garlic. Cook for an additional 5 minutes.
- Step 4: Add the shrimp and lemon slices to the pot and cook until the shrimp turn pink, about 3-5 minutes.
- Step 5: Drizzle with olive oil and season with salt and pepper to taste.
- Step 6: Remove from heat and let cool slightly before serving.
- Step 7: Garnish with fresh parsley and serve in bowls.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat it on the stove or in the microwave, but be careful not to overcook the shrimp again!
