Cajun Shrimp, Sausage & Cheesy Grits Bowl

Ingredients
  

For the Cheesy Grits
  • 1 cup stone-ground grits
  • 4 cups water
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese
For the Cajun Shrimp and Sausage
  • 1 lb shrimp peeled and deveined
  • 1 lb smoked sausage sliced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper diced
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 green onion sliced for garnish
  • 1 bunch fresh parsley chopped, for garnish

Method
 

  1. Step 1: In a large pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt and gradually stir in the grits. Reduce the heat to low and cook, stirring occasionally, for about 20-25 minutes, or until the grits are thick and creamy.
  2. Step 2: Stir in the shredded cheddar cheese until melted and well combined. Remove from heat and set aside.
  3. Step 3: In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
  4. Step 4: Add the diced bell pepper, onion, and garlic to the skillet. Sauté for an additional 3-4 minutes until the vegetables are softened.
  5. Step 5: Add the shrimp and Cajun seasoning to the skillet. Cook until the shrimp turn pink and are cooked through, about 3-5 minutes.
  6. Step 6: To serve, spoon the cheesy grits into bowls and top with the Cajun shrimp and sausage mixture. Garnish with sliced green onions and chopped parsley.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of water or broth to loosen the grits.
