- Step 1: In a large pot, bring water to a boil. Once it’s boiling, add the baby potatoes and cook for about 10 minutes, or until they are tender.
- Step 2: Add the corn to the pot and continue boiling for an additional 5 minutes.
- Step 3: Stir in the shrimp, Cajun seasoning, melted butter, minced garlic, and lemon juice. Cook for another 3-5 minutes, or until the shrimp are pink and cooked through.
- Step 4: Remove the pot from heat and season with salt and pepper to taste.
- Step 5: Serve the mixture in bowls, garnished with fresh parsley. Enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 2 days. Gently reheat in the microwave or on the stovetop until warmed through.
