- Step 1: In a small bowl, combine the honey, minced garlic, and Cajun seasoning. This mixture is the star of the show!
- Step 2: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Place the salmon fillets in the skillet, skin side down, and cook for about 4-5 minutes.
- Step 3: Carefully flip the salmon using a spatula and brush the honey garlic mixture generously over the top. Cook for an additional 3-4 minutes until the salmon is cooked through and flaky. Remove from the skillet and set aside.
- Step 4: In the same skillet, add the remaining tablespoon of olive oil and toss in the shrimp. Season with salt and pepper. Cook for about 2-3 minutes until the shrimp turn pink and opaque.
- Step 5: Add the mixed vegetables to the skillet and sauté for another 3-4 minutes until they are tender and vibrant.
- Step 6: To assemble your rice bowl, scoop a generous portion of cooked rice into a bowl. Top it with the sautéed vegetables and shrimp, then place a beautiful salmon fillet on top. Drizzle any remaining honey garlic sauce over the bowl and finish with a sprinkle of chopped parsley. Serve immediately and enjoy!
