Cajun Garlic Shrimp with Rice & Peppers

Ingredients
  

For the Cajun Garlic Shrimp
  • 1 lb shrimp peeled and deveined
  • 2 tbsp Cajun seasoning adjust to spice preference
  • 4 cloves garlic minced
  • 1 tbsp olive oil
  • 1 cup bell peppers diced (red, green, yellow)
  • 1 medium onion diced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley

Method
 

  1. Step 1: In a bowl, toss the shrimp with the Cajun seasoning and set aside.
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Step 3: Add the diced onion and bell peppers to the skillet. Cook for about 5 minutes, or until softened.
  4. Step 4: Stir in the rice, cooking for an additional 2 minutes.
  5. Step 5: Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and let simmer for 15 minutes.
  6. Step 6: In the last 5 minutes of cooking, add the seasoned shrimp to the skillet. Stir gently until shrimp turn pink and opaque.
  7. Step 7: Season with salt and pepper to taste. Garnish with chopped parsley and serve warm.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days.
