- Step 1: In a bowl, toss the shrimp with the Cajun seasoning and set aside.
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Step 3: Add the diced onion and bell peppers to the skillet. Cook for about 5 minutes, or until softened.
- Step 4: Stir in the rice, cooking for an additional 2 minutes.
- Step 5: Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and let simmer for 15 minutes.
- Step 6: In the last 5 minutes of cooking, add the seasoned shrimp to the skillet. Stir gently until shrimp turn pink and opaque.
- Step 7: Season with salt and pepper to taste. Garnish with chopped parsley and serve warm.
Notes
