Ingredients
  

For the Cajun Garlic Butter Shrimp
  • 1 lb shrimp peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tbsp Cajun seasoning
For the Yellow Rice
  • 1 cup yellow rice
  • 2 cups vegetable or chicken broth
For the Broccoli
  • 2 cups broccoli florets
For Serving
  • lemon wedges

Method
 

  1. Step 1: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the yellow rice, then reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  2. Step 2: While the rice is cooking, heat 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Step 3: Add the shrimp to the skillet and sprinkle with Cajun seasoning, salt, and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat and stir in the remaining 2 tablespoons of butter until melted.
  4. Step 4: In a separate pot, steam the broccoli florets until tender, about 5-7 minutes.
  5. Step 5: To serve, place a portion of yellow rice on each plate, top with Cajun garlic butter shrimp, and add steamed broccoli on the side. Garnish with lemon wedges.

Notes

This dish can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of broth or water to keep the rice moist.
