Ingredients

Ingredients
  • 12 oz cheese tortellini
  • 1 tbsp salt for pasta water
  • 3 cups shredded rotisserie chicken pre-cooked
  • 2 tbsp butter divided
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning plus extra for sauce
  • 1/2 tsp smoked paprika
  • 1 cup heavy cream
  • 1/2 cup marinara sauce
  • 4 oz cream cheese softened
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Equipment

  • Large Pot
  • Large Skillet
  • Spoon or Spatula

Method

  1. Step 1: Bring a large pot of salted water to a boil. Cook the cheese tortellini until tender, about 3–5 minutes. Drain and set aside without rinsing.
  2. Step 2: Heat a large skillet over medium heat. Add olive oil and 1 tablespoon butter.
  3. Step 3: Add shredded rotisserie chicken, 1 teaspoon Cajun seasoning, and smoked paprika. Stir and cook until warmed and coated with spices. Remove chicken from skillet and set aside.
  4. Step 4: In the same skillet, melt the remaining 1 tablespoon butter over medium heat.
  5. Step 5: Add heavy cream and marinara sauce. Stir gently until warmed and combined into a pinkish sauce base.
  6. Step 6: Stir in softened cream cheese continuously until melted and sauce is smooth and velvety.
  7. Step 7: Add shredded mozzarella and grated Parmesan. Stir until cheese melts and sauce thickens to a glossy finish.
  8. Step 8: Season sauce with ½ teaspoon Cajun seasoning, garlic powder, and onion powder. Adjust to taste.
  9. Step 9: Fold cooked tortellini into sauce, tossing well to coat each piece evenly.
  10. Step 10: Return seasoned rotisserie chicken to skillet and fold into tortellini and sauce. Warm through for about a minute.
  11. Step 11: Serve immediately, optionally with crusty garlic bread or a fresh green salad.

Notes

Swap heavy cream and cheeses for dairy-free alternatives to make this dish dairy-free. Use grilled or pan-seared chicken instead of rotisserie if preferred. Add veggies like bell peppers, spinach, or mushrooms for extra nutrition and color. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently, adding cream or milk if sauce thickens.
