- Step 1: Preheat a skillet over medium-high heat.
- Step 2: Rub the salmon fillets with blackening seasoning on both sides.
- Step 3: Cook salmon in the skillet for 4-5 minutes on each side until cooked through. Remove and set aside.
- Step 4: In the same skillet, add sesame oil and sauté minced garlic until fragrant, about 30 seconds.
- Step 5: Add mixed vegetables and cook until tender, about 3-4 minutes.
- Step 6: Push veggies to one side, pour in beaten eggs, and scramble until cooked through.
- Step 7: Add cooked jasmine rice and soy sauce to skillet, mix everything together, and season with salt and pepper to taste.
- Step 8: Flake the blackened salmon and gently fold into the rice mixture.
- Step 9: Serve in bowls, garnished with chopped green onions and fresh cilantro, if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water or soy sauce.
