For the Balsamic Caprese Flank Steak
  • 1.5 lb flank steak a great cut for marinating and grilling
  • 1 cup balsamic vinegar adds tangy sweetness
  • 2 tbsp olive oil for marinating
  • 2 cloves garlic minced
  • 1 tsp dried oregano enhances flavor
  • Salt and pepper to taste
  • 2 cups cherry tomatoes halved
  • 1 cup fresh mozzarella balls halved
  • 1 cup fresh basil leaves

Method
 

  1. Step 1: In a small saucepan, combine the balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper. Bring to a simmer over medium heat and cook for about 5 minutes, or until slightly thickened. Remove from heat and let cool.
  2. Step 2: Place the flank steak in a resealable plastic bag or shallow dish. Pour half of the balsamic mixture over the steak, ensuring it is evenly coated. Marinate in the refrigerator for at least 1 hour or up to 4 hours.
  3. Step 3: Preheat the grill to medium-high heat. Remove the steak from the marinade and discard the marinade.
  4. Step 4: Grill the flank steak for about 5-7 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for 5 minutes.
  5. Step 5: While the steak is resting, combine the cherry tomatoes, mozzarella balls, and basil in a bowl. Drizzle with the remaining balsamic mixture and toss gently to combine.
  6. Step 6: Slice the flank steak against the grain into thin strips and serve topped with the Caprese mixture.

Notes

Don't skip the marinating time; it really helps the flavors penetrate the meat. Leftovers can be stored in an airtight container for up to 3 days.
