  • 1 lb fresh salmon skin removed and chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic minced
  • 1 large egg
  • 1 teaspoon lemon juice
For the Creamy Avocado Sauce
  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 clove garlic minced

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Step 2: In a large bowl, combine the chopped salmon, breadcrumbs, Parmesan cheese, parsley, garlic, egg, lemon juice, salt, and pepper. Mix until everything is well combined.
  3. Step 3: Form the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Step 4: Bake the meatballs in the preheated oven for 15-20 minutes or until they are cooked through and lightly browned.
  5. Step 5: While the meatballs are baking, prepare the avocado cream sauce. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, garlic, salt, and pepper. Blend until smooth and creamy.
