- Step 1: Preheat your oven to 400°F (200°C) to ensure crispy skin and juicy meat.
- Step 2: In a large bowl, toss chicken drumsticks with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
- Step 3: Line a baking tray with parchment paper or foil. Arrange the drumsticks in a single layer and bake for 30 minutes.
- Step 4: Remove the tray from the oven and generously brush each drumstick with BBQ sauce.
- Step 5: Return the chicken to the oven and bake for another 10–15 minutes, or until the BBQ sauce is caramelized and sticky.
- Step 6: While the chicken finishes baking, toss chopped lettuce, sliced cucumber, and halved cherry tomatoes with olive oil and salt in a bowl.
- Step 7: Serve the warm, saucy drumsticks alongside the fresh salad for a balanced and flavorful meal.
Notes
For extra flavor, try adding cayenne or chili powder to the chicken seasoning. You can also add sliced red onion, avocado, or bell peppers to the salad. Store leftover chicken in an airtight container in the fridge for up to 3 days. Salad is best eaten fresh.
