Ingredients

  • 1 cup cottage cheese small curd recommended; low-fat or full-fat
  • 1/2 cup grated Parmesan cheese freshly grated preferred
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried herbs such as Italian seasoning or oregano
  • salt to taste
  • pepper to taste
  • cooking spray or olive oil for greasing

Equipment

  • baking sheet
  • parchment paper or silicone baking mat
  • medium bowl
  • Spoon
  • Wire rack

Method

  1. Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Step 2: In a medium bowl, combine the cottage cheese, Parmesan cheese, garlic powder, onion powder, dried herbs, salt, and pepper. Stir until everything is well mixed.
  3. Step 3: Scoop small mounds of the mixture onto your prepared baking sheet, spacing them about 2 inches apart. Gently flatten each one slightly with the back of a spoon.
  4. Step 4: Bake for 15-20 minutes, or until the edges are golden and the chips look noticeably crispy. Keep a close eye on them as ovens vary.
  5. Step 5: Carefully remove the sheet from the oven. Let the chips cool on the baking sheet for at least 5-10 minutes to firm up. Then, transfer them to a wire rack to cool completely for ultimate crispiness.

Notes

Substitutions & Additions: Swap Parmesan with grated sharp cheddar, nutritional yeast, or a blend of Italian cheeses. Add spice with a pinch of cayenne pepper, red pepper flakes, or smoked paprika. Use fresh, finely chopped herbs instead of dried. Sprinkle everything bagel seasoning over the flattened mounds before baking. Add a sprinkle of sesame seeds or poppy seeds for texture. Stir in a tiny bit of minced fresh garlic (like half a clove) for extra garlic flavor, being mindful of added moisture.
Tips for Success: Don't overcrowd the pan; bake in batches if necessary. Parchment paper or a silicone mat is crucial for easy removal. Flatten the mounds gently for even baking. Letting them cool completely on a wire rack is essential for achieving crunch. Adjust bake time based on your oven and chip thickness. You can mix the cottage cheese mixture ahead of time and store it in the fridge for a day or two before baking.
Storage: Store cooled chips in an airtight container at room temperature for 1-2 days. If they lose crispness, you can briefly pop them back in a low oven (around 250°F) for a few minutes to re-crisp, watching closely to prevent burning.
